Creamy Steak and Mushroom Pasta

Ingredients
  

For the Steak and Pasta
  • 1.25 lbs Sirloin or New York Strip Steak about 1-inch thick, patted dry
  • 1 tbsp Olive Oil
  • 1 tsp Kosher Salt divided
  • 1 tsp Black Pepper freshly cracked, divided
  • 12 oz Penne Pasta or other short pasta like rigatoni or fusilli
For the Creamy Mushroom Sauce
  • 2 tbsp Unsalted Butter
  • 1 Shallot finely chopped
  • 4 cloves Garlic minced
  • 8 oz Cremini Mushrooms sliced
  • 1/4 cup Dry White Wine such as Sauvignon Blanc, or use chicken broth
  • 1.5 cups Heavy Cream
  • 3/4 cup Parmesan Cheese freshly grated, plus more for serving
  • 2 cups Fresh Spinach packed
  • 1/4 tsp Red Pepper Flakes optional, for a hint of spice
  • 2 tbsp Fresh Parsley chopped, for garnish

Method
 

Prepare and Cook Steak & Pasta
  1. Bring a large pot of generously salted water to a boil. Pat the steak dry with paper towels and season all sides liberally with 1/2 tsp salt and 1/2 tsp black pepper.
  2. Heat olive oil in a large skillet over medium-high heat until it shimmers. Carefully place the steak in the hot skillet and sear for 3-5 minutes per side for medium-rare, or until it reaches your desired doneness. Remove the steak from the skillet and set it on a cutting board to rest.
  3. While the steak is cooking, add the pasta to the boiling water and cook according to package directions until al dente. Before draining, reserve about 1 cup of the starchy pasta water.
Make the Creamy Mushroom Sauce
  1. Reduce the heat under the skillet to medium. Add the butter and let it melt. Add the chopped shallot and cook for 2 minutes until softened. Add the sliced mushrooms, the remaining 1/2 tsp salt, and 1/2 tsp black pepper. Cook, stirring occasionally, for 5-7 minutes until the mushrooms are browned and have released their liquid.
  2. Add the minced garlic and red pepper flakes (if using) to the skillet and cook for 1 minute until fragrant.
  3. Pour in the white wine (or broth) to deglaze the pan, scraping up any browned bits from the bottom. Let it simmer for 1-2 minutes until the liquid has mostly evaporated.
  4. Stir in the heavy cream and bring the sauce to a gentle simmer. Reduce the heat to low and slowly stir in the grated Parmesan cheese until the sauce is smooth and creamy. Do not let it boil after adding the cheese.
Combine and Serve
  1. Add the fresh spinach to the sauce and stir until it wilts, about 1-2 minutes. Taste the sauce and adjust seasoning if needed.
  2. Add the drained pasta to the skillet with the sauce. Toss well to coat everything. If the sauce is too thick, add a splash of the reserved pasta water until it reaches your desired consistency.
  3. Slice the rested steak thinly against the grain. You can either stir the steak slices into the pasta or serve the pasta in bowls and arrange the steak on top.
  4. Garnish with fresh parsley and extra Parmesan cheese before serving.

Notes

Steak Tips: For the best sear, make sure your pan is hot and your steak is very dry before seasoning. Resting the steak for at least 10 minutes before slicing is crucial for keeping it juicy.
Storage: Store leftovers in an airtight container in the refrigerator for up to 3 days. Reheat gently on the stovetop with a splash of milk or cream to loosen the sauce.
Variations: Feel free to add other vegetables like sun-dried tomatoes, asparagus tips, or roasted red peppers. For a different flavor profile, try using Gorgonzola or another creamy blue cheese in the sauce.
