Creamy Whipped Feta with Honey Drizzle

Ingredients
  

For the Whipped Feta
  • 8 oz Feta Cheese block, crumbled
  • 4 oz Cream Cheese softened, room temperature
  • 3 tbsp Extra Virgin Olive Oil plus more for drizzling
  • 1 tbsp Fresh Lemon Juice
  • 1 clove Garlic minced, or 1/2 tsp garlic powder
  • 1/4 tsp Black Pepper freshly ground
  • 1 tbsp Honey optional, for serving
For Serving & Garnish
  • 1 tbsp Fresh Parsley chopped, or other fresh herbs like dill/oregano
  • 1/4 tsp Red Pepper Flakes optional
  • 1 pack Pita Bread warm, cut into wedges
  • 1 cup Cucumber Slices
  • 1 cup Cherry Tomatoes halved

Method
 

  1. Ensure your cream cheese is at room temperature for easy blending. Crumble the block of feta cheese into smaller pieces. Mince the garlic clove.
  2. In the bowl of a food processor, combine the crumbled feta cheese, softened cream cheese, 3 tablespoons of extra virgin olive oil, fresh lemon juice, minced garlic, and freshly ground black pepper.
  3. Secure the lid and process the mixture on high speed until it is completely smooth and creamy, scraping down the sides with a rubber spatula as needed. This may take 2-3 minutes. The consistency should be light and spreadable.
  4. Taste the whipped feta and adjust seasonings if necessary. You might want a little more lemon juice for tang or pepper for spice.
  5. Transfer the whipped feta to a shallow serving bowl. Create a small well in the center and drizzle generously with additional extra virgin olive oil and the optional honey. Garnish with chopped fresh parsley and red pepper flakes, if using.
  6. Serve immediately with warm pita bread wedges, cucumber slices, cherry tomatoes, or other desired dippers.

Notes

For best flavor, allow the whipped feta to chill in the refrigerator for at least 30 minutes before serving. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
