Marinate the Chicken
- In a medium bowl, whisk together the buttermilk, hot sauce, 1/2 tsp salt, and 1/4 tsp black pepper.
- Add the pounded chicken breasts to the marinade, ensuring they are fully coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours.
Prepare Breading and Sauce
- In a shallow dish, combine the flour, cornstarch, paprika, garlic powder, onion powder, cayenne pepper, 1 tsp salt, and 1/2 tsp black pepper.
- In a second shallow dish, whisk the egg and water together.
- In a small bowl, mix together all the ingredients for the spicy mayo: mayonnaise, sriracha, lime juice, and smoked paprika. Set aside.
Bread the Chicken
- Remove a chicken breast from the marinade, allowing any excess to drip off.
- Dredge the chicken in the flour mixture, pressing to adhere.
- Dip it into the egg wash, coating both sides.
- Return the chicken to the flour mixture for a second coat, ensuring it's completely covered. Place on a wire rack and repeat with the second breast.
Air Fry
- Preheat your air fryer to 380 degrees F (193 degrees C).
- Lightly spray the air fryer basket with cooking spray. Place the breaded chicken in the basket in a single layer. Do not overcrowd; cook in batches if needed.
- Spray the tops of the chicken with cooking spray.
- Air fry for 10-12 minutes, then flip the chicken. Spray the other side and cook for another 6-8 minutes, or until the chicken is golden brown, crispy, and has an internal temperature of 165 degrees F (74 degrees C).
Assemble the Sandwiches
- While the chicken is cooking, toast the brioche buns.
- Spread a generous layer of spicy mayo on the inside of both halves of each bun.
- Place the cooked chicken on the bottom bun. Top with dill pickle slices and lettuce.
- Cover with the top bun and serve immediately.
Notes
For the crispiest chicken, make sure to press the breading firmly onto the chicken. Pounding the chicken to an even thickness ensures it cooks evenly.
