Crispy Air Fryer Coconut Chicken

Ingredients
  

For the Coconut Chicken
  • 1.5 lbs boneless, skinless chicken breasts cut into 1-inch cubes
  • 1/2 cup full-fat coconut milk from a can, well-shaken
  • 1 tbsp soy sauce or tamari for gluten-free
  • 1 tsp grated fresh ginger
  • 2 cloves garlic minced
  • 1 cup panko breadcrumbs
  • 1 cup unsweetened shredded coconut fine or medium shred
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 tsp smoked paprika
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Cooking spray avocado or olive oil
For the Sweet Chili Lime Sauce
  • 1/2 cup sweet chili sauce
  • 2 tbsp fresh lime juice from about 1 lime
  • 1 tbsp cilantro finely chopped, optional

Method
 

Marinate the Chicken
  1. In a medium bowl, whisk together the coconut milk, soy sauce, grated ginger, and minced garlic.
  2. Add the cubed chicken to the bowl and toss well to ensure every piece is coated. Cover and refrigerate for at least 30 minutes, or up to 4 hours, to allow the flavors to meld.
Prepare the Breading Station
  1. Set up three shallow dishes or bowls. In the first dish, place the all-purpose flour. In the second, whisk the two large eggs until smooth. In the third dish, combine the panko breadcrumbs, shredded coconut, smoked paprika, salt, and black pepper. Mix well.
Coat the Chicken
  1. Working one piece at a time, remove a chicken cube from the marinade, allowing any excess to drip off. First, dredge it in the flour, shaking off the excess. Next, dip it completely in the beaten egg. Finally, press the chicken firmly into the coconut-panko mixture, ensuring it's fully and evenly coated.
  2. Place the coated chicken pieces on a plate or baking sheet in a single layer. Do not stack them.
Air Fry the Chicken
  1. Preheat your air fryer to 400°F (200°C) for 3-5 minutes.
  2. Arrange the coated chicken in a single layer in the air fryer basket. Do not overcrowd the basket; work in batches if necessary for the crispiest results. Lightly spray the tops of the chicken with cooking spray.
  3. Air fry for 10-14 minutes, flipping the chicken halfway through cooking and spraying the other side. The chicken is done when it's golden brown, crispy, and cooked through (internal temperature reaches 165°F or 74°C).
Make the Sauce and Serve
  1. While the chicken is cooking, prepare the dipping sauce. In a small bowl, whisk together the sweet chili sauce, fresh lime juice, and optional chopped cilantro.
  2. Serve the hot and crispy coconut chicken immediately with the sweet chili lime sauce for dipping.

Notes

For best results, use unsweetened shredded coconut, as sweetened coconut can burn more easily. Don't overcrowd the air fryer basket! Cooking in batches ensures the hot air can circulate properly for maximum crispiness.
Oven Method: If you don't have an air fryer, preheat your oven to 425°F (220°C). Place coated chicken on a wire rack set over a baking sheet. Bake for 15-20 minutes, flipping halfway, until golden and cooked through.
Storage: Store leftover chicken in an airtight container in the refrigerator for up to 3 days. Reheat in the air fryer at 375°F for 3-5 minutes to restore crispiness.
