Ingredients

For the Cottage Cheese Wrap Shells
  • 1 cup full-fat cottage cheese 250g
  • 1 large egg
  • 1 tbsp cornstarch or arrowroot powder
  • 1/2 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/4 tsp salt
  • Pinch black pepper
For the Fillings (Suggested)
  • 2 slices deli turkey or ham
  • 1/4 cup shredded cheddar or mozzarella cheese
  • 1/4 cup baby spinach
  • 2 tbsp diced bell pepper any color

Equipment

  • Air Fryer
  • Large Mixing Bowl
  • Spatula
  • Parchment Paper

Method

Prepare the Cottage Cheese Mixture
  1. In a large mixing bowl, combine the cottage cheese, egg, cornstarch, garlic powder, onion powder, salt, and black pepper. Mix thoroughly until well combined and the cottage cheese curds are slightly broken down.
Preheat and Prepare Air Fryer
  1. Preheat your air fryer to 375°F (190°C). Line the air fryer basket with a piece of parchment paper, ensuring it doesn't obstruct airflow too much.
Form the Wrap Shells
  1. Divide the cottage cheese mixture into two equal portions. Spoon one portion onto the center of the prepared parchment paper in the air fryer basket. Using the back of a spoon or a spatula, spread the mixture evenly into a thin, round or rectangular shape, about 6-7 inches in diameter, ensuring it's not too thick in the center. Repeat this step if your air fryer can accommodate two wraps side-by-side, or cook them one at a time.
Air Fry the First Side
  1. Air fry the cottage cheese wrap shell for 10-12 minutes, or until the edges are golden brown and the center is set and firm. The exact time may vary based on your air fryer model and thickness of the wrap.
Flip and Continue Cooking (Optional, for crispier texture)
  1. Carefully flip the wrap using a spatula. Air fry for another 3-4 minutes to get an even crispier texture on the second side.
Add Fillings
  1. Remove the wrap from the air fryer (or keep it in if working one at a time). Immediately place your desired fillings (e.g., deli meat, shredded cheese, spinach, bell pepper) onto one half of the warm wrap.
Fold and Finish
  1. Gently fold the other half of the wrap over the fillings. Return the folded wrap to the air fryer. Air fry for an additional 2-3 minutes, or until the cheese is melted and the fillings are warmed through.
Serve
  1. Carefully remove the crispy cottage cheese wrap from the air fryer. Repeat steps 3-7 for the second wrap if cooked separately. Serve immediately and enjoy your delicious, high-protein cottage cheese wraps!

Notes

For best results, use full-fat cottage cheese, as it contributes to a better texture and helps prevent sticking. Experiment with different seasonings like paprika, chili powder, or Italian herbs for varied flavors. Get creative with your fillings! Cooked chicken, avocado, salsa, or scrambled eggs make great additions. These wraps are best enjoyed fresh. If you have leftovers, they can be stored in an airtight container in the fridge for up to 1 day, but the texture will soften.
