Prepare the Potatoes
- In a large mixing bowl, combine diced potatoes with olive oil, chili powder, cumin, garlic powder, smoked paprika, salt, and black pepper. Toss until potatoes are evenly coated.
Cook the Potatoes (Air Fryer)
- Preheat your air fryer to 375°F (190°C). Arrange the seasoned potatoes in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding. Air fry for 20-25 minutes, shaking the basket every 5-7 minutes, until potatoes are tender inside and crispy golden brown outside.
Cook the Taco Meat
- While potatoes are cooking, heat 1 tbsp olive oil in a large skillet over medium-high heat. Add ground beef and cook, breaking it up with a spatula, until browned and no longer pink, about 5-7 minutes. Drain any excess grease.
Season the Taco Meat
- Stir in the taco seasoning packet and 1/2 cup water. Bring to a simmer, then reduce heat to low and cook for 5-7 minutes, stirring occasionally, until the sauce has thickened.
Assemble and Serve
- Divide the crispy air-fried potatoes among serving plates. Top each portion generously with the seasoned taco meat.
- Garnish with shredded cheddar cheese, a dollop of sour cream, chopped fresh cilantro, salsa, and pickled jalapeños (if using). Serve immediately.
Notes
For oven baking, preheat oven to 400°F (200°C). Spread seasoned potatoes in a single layer on a baking sheet and roast for 30-35 minutes, flipping halfway, until crispy. You can also customize toppings with guacamole, sliced green onions, or hot sauce!
