Crispy Kung Pao Cauliflower

Ingredients
  

For the Crispy Cauliflower
  • 1 large head Cauliflower cut into bite-sized florets
  • 1/2 cup Cornstarch
  • 1/4 cup All-purpose flour
  • 1 tsp Garlic powder
  • 1/2 tsp Onion powder
  • 1/2 tsp Smoked paprika
  • 1 tsp Salt
  • 1/2 tsp Black pepper
  • 1/2 cup Water or as needed
  • Cooking oil spray for air fryer
For the Kung Pao Sauce
  • 3 tbsp Low-sodium soy sauce
  • 2 tbsp Rice vinegar
  • 1 tbsp Brown sugar
  • 1 tbsp Hoisin sauce optional, for extra richness
  • 1 tsp Sesame oil
  • 1-2 tsp Chili garlic sauce adjust to taste
  • 1 tsp Cornstarch
  • 2 tbsp Water
For the Stir-Fry
  • 1/2 cup Toasted peanuts unsalted
  • 8-10 Dried red chilies small whole, de-seeded if less heat preferred
  • 1 tsp Sichuan peppercorns whole, optional but recommended for authentic flavor
  • 3 cloves Garlic minced
  • 1 tbsp Fresh ginger grated
  • 3 Green onions (scallions) sliced, white and green parts separated
  • 2 tbsp Vegetable oil

Method
 

Prepare the Crispy Cauliflower
  1. In a large bowl, whisk together 1/2 cup cornstarch, flour, garlic powder, onion powder, smoked paprika, salt, and black pepper. Gradually add 1/2 cup water, whisking until a thick, smooth batter forms. Adjust water if needed; the batter should be thick enough to cling to the cauliflower.
  2. Add the cauliflower florets to the batter and toss until evenly coated.
  3. Preheat your air fryer to 375°F (190°C). Lightly spray the air fryer basket with cooking oil.
  4. Place the coated cauliflower in a single layer in the air fryer basket, working in batches if necessary to avoid overcrowding. Spray the cauliflower lightly with cooking oil.
  5. Air fry for 18-22 minutes, shaking the basket halfway through, until the cauliflower is golden brown and crispy. Set aside.
Make the Kung Pao Sauce
  1. While the cauliflower cooks, prepare the sauce. In a small bowl, whisk together soy sauce, rice vinegar, brown sugar, hoisin sauce (if using), sesame oil, and chili garlic sauce. In a separate tiny bowl, mix 1 tsp cornstarch with 2 tbsp water to create a slurry. Set both aside.
Assemble the Kung Pao Cauliflower
  1. Heat 2 tbsp vegetable oil in a wok or large skillet over medium-high heat. Add the dried red chilies and Sichuan peppercorns (if using). Stir-fry for about 30 seconds until fragrant and the chilies slightly darken (be careful not to burn them).
  2. Add the minced garlic, grated ginger, and the white parts of the green onions to the wok. Stir-fry for another minute until fragrant.
  3. Pour in the prepared Kung Pao sauce. Bring to a simmer, then whisk in the cornstarch slurry. Cook for 1-2 minutes, stirring constantly, until the sauce thickens.
  4. Add the air-fried crispy cauliflower and toasted peanuts to the wok. Toss gently to coat all the cauliflower evenly with the sauce.
  5. Remove from heat and stir in the green parts of the green onions.
  6. Serve immediately over steamed rice or noodles, garnished with extra peanuts or green onions if desired.

Notes

For a spicier dish, do not de-seed the dried red chilies, and add extra chili garlic sauce to taste. If you don't have an air fryer, you can roast the coated cauliflower in an oven at 400°F (200°C) for 25-30 minutes, flipping halfway, until crispy.
