Prep
- Pat chicken dry with paper towels. Season both sides with salt and pepper. Arrange in a single layer in the slow cooker - it's fine if they overlap slightly.
- In a small bowl, whisk together lime juice, olive oil, minced garlic, cumin, and oregano. Pour evenly over the chicken, making sure some gets underneath.
Slow cook
- Cover and cook on LOW for 6-8 hours or HIGH for 3-4 hours, until chicken is very tender and shreds easily with a fork. Thighs hold up better to longer cooking and stay juicier.
Shred and finish
- Transfer cooked chicken to a cutting board. Use two forks to shred into bite-sized pieces, then return to the slow cooker. The cooking liquid will look thin - this is intentional and keeps everything moist.
- Stir in chopped cilantro and lime zest. Let sit for 5 minutes to meld. Taste and add more salt if needed - the fresh lime can mute the seasoning.
- Serve with slotted spoon to drain excess liquid, or use the juices to moisten rice. Top with extra cilantro, lime wedges, and your favorite fixings.
Notes
Chicken thighs are strongly preferred over breasts - they stay tender and don't dry out even with longer cooking. For meal prep, cook completely, cool, and refrigerate up to 4 days; the flavor actually improves overnight. If your limes are dry or not very juicy, use 3 limes to get the full quarter cup needed.
