Crockpot French Onion Meatballs

Ingredients
  

For the Meatballs
  • 1.5 lbs ground beef 80/20 for best flavor
  • 0.5 cup panko breadcrumbs
  • 1 large egg lightly beaten
  • 1 tbsp Worcestershire sauce
  • 0.5 tsp garlic powder
  • 0.75 tsp salt divided
  • 0.5 tsp black pepper freshly ground
For the French Onion Sauce
  • 2 large yellow onions thinly sliced (about 4 cups)
  • 3 tbsp unsalted butter
  • 2 cups beef broth low sodium
  • 0.25 cup dry sherry or white wine optional, or use extra broth
  • 4 sprigs fresh thyme or 1/2 tsp dried
  • 1 bay leaf
  • 6 oz Gruyere cheese shredded, for topping

Method
 

Prep
  1. Melt butter in a large skillet over medium heat. Add sliced onions and 1/4 teaspoon salt. Cook, stirring occasionally, until deeply golden and softened, 15-20 minutes. Don't rush this - the color equals flavor.
  2. Add sherry to the skillet, scraping up any browned bits from the bottom. Let bubble for 1 minute, then stir in beef broth, thyme, bay leaf, and remaining 1/2 teaspoon salt. Bring to a simmer, then remove from heat.
Make the Meatballs
  1. In a large bowl, gently combine ground beef, panko, egg, Worcestershire, garlic powder, and black pepper. Use your hands or a scoop to form 20 meatballs, about 2 inches each. Don't overwork the meat or they'll get tough.
Slow Cook
  1. Pour the onion mixture into your slow cooker. Nestle meatballs in a single layer, spooning some sauce over top. Cover and cook on LOW for 6-7 hours or HIGH for 3-4 hours, until meatballs are cooked through and tender.
  2. About 15 minutes before serving, sprinkle Gruyere evenly over the meatballs. Cover and let melt until gooey and irresistible. Discard thyme stems and bay leaf.
Serve
  1. Serve hot over buttered egg noodles, mashed potatoes, or crusty bread for soaking up every drop of that savory gravy. Spoon extra onions and sauce over the top.

Notes

Make-ahead: Form raw meatballs and freeze on a baking sheet, then transfer to a bag for up to 3 months. Add 1 hour to cook time from frozen. Cheese swap: Swiss or fontina work beautifully if Gruyere is pricey. For deeper onion flavor, cook them the night before and refrigerate - the rest happens in the crockpot while you're at work.
