- 4 croissants preferably day-old, sliced in half lengthwise
- 3 eggs large
- 1/2 cup milk or heavy cream
- 1 tsp vanilla extract
- 1/2 tsp cinnamon
- 1 tbsp butter for cooking
- maple syrup for serving

In a mixing bowl, whisk together eggs, milk, vanilla extract, cinnamon, and any optional add-ins.
Slice croissants in half lengthwise.
