Curried Roasted Cauliflower Chickpea Salad

Ingredients
  

For the Vegetables
  • 1 large head cauliflower cut into bite-sized florets, about 8 cups
  • 1 can (15 oz) chickpeas drained, rinsed, and patted very dry
  • 3 tbsp olive oil divided
  • 2 tsp curry powder mild or hot, your preference
  • 1 tsp ground cumin
  • 1 tsp kosher salt divided
  • 0.5 tsp black pepper freshly ground
For the Dressing
  • 2 tbsp lemon juice freshly squeezed
  • 2 tbsp tahini well stirred
  • 1 tsp honey
  • 1 tbsp warm water to thin
For Finishing
  • 0.25 cup fresh cilantro roughly chopped
  • 2 tbsp toasted almonds roughly chopped

Method
 

Roast the Vegetables
  1. Position a rack in the center of your oven and heat to 425F. In a large bowl, toss cauliflower florets with 2 tablespoons olive oil, curry powder, cumin, 3/4 teaspoon salt, and pepper until evenly coated. Spread on a large rimmed baking sheet and roast for 15 minutes, until starting to brown at the edges.
  2. Remove the pan from the oven. Add the dried chickpeas to the same bowl you used for cauliflower, toss with remaining 1 tablespoon olive oil and 1/4 teaspoon salt, then scatter chickpeas around the partially roasted cauliflower. Return to the oven and roast 10 to 12 minutes more, until the cauliflower is deeply golden in spots and the chickpeas are crisp and slightly shriveled.
Make the Dressing
  1. While the vegetables roast, whisk together lemon juice, tahini, honey, and warm water in a small bowl until smooth and pourable. It should coat the back of a spoon; add a splash more water if needed.
Assemble and Serve
  1. Transfer the hot roasted vegetables to a serving bowl. Drizzle with the tahini dressing and toss gently to coat. Scatter cilantro and almonds over the top. Serve warm or at room temperature.

Notes

Dry your chickpeas thoroughly - moisture is the enemy of crispness. A salad spinner works great for this. Make it a meal by serving over warm naan or with a fried egg on top. The salad keeps well for 3 days refrigerated; the chickpeas soften but the flavors deepen.
