  • 1.5 cup frozen dragon fruit cubes red or white pitaya
  • 1 large frozen banana
  • 0.75 cup unsweetened almond milk or other plant-based milk
  • 1 tbsp freshly squeezed lime juice
  • 1 tbsp honey or maple syrup optional, adjust to taste
  • 0.25 tsp vanilla extract
For Garnish (Optional)
  • 0.25 cup fresh dragon fruit diced
  • 1 tsp chia seeds

Gather Ingredients
  1. Make sure your dragon fruit and banana are well frozen – this is key for a super frosty and thick smoothie! Add the frozen dragon fruit, frozen banana, unsweetened almond milk, fresh lime juice, honey or maple syrup (if using), and vanilla extract into your high-speed blender.
  2. Secure the lid and start blending on a low speed, gradually increasing to high. If your blender has a tamper, use it to push the ingredients down towards the blades for a more consistent blend. You want it completely smooth and creamy, without any icy chunks.
  3. If the smoothie is too thick to blend or pour, add a tiny splash more almond milk (1-2 tablespoons at a time) and blend again until you reach your desired consistency. Don't add too much at once, or it might become watery.
  4. Carefully pour the vibrant pink smoothie into two serving glasses.
  5. If you're feeling fancy, sprinkle with chia seeds or add a few fresh dragon fruit cubes on top for an extra pop of color and texture. Enjoy this beautiful and refreshing smoothie right away!

Notes

Sweetness is personal! Taste your smoothie before pouring and add an extra drizzle of honey or maple syrup if you prefer it sweeter. If you can't find frozen dragon fruit, you can buy fresh and freeze it yourself, or use a combination of fresh dragon fruit and extra frozen banana/mango for a similar texture. For a thicker smoothie bowl, reduce the almond milk to 1/2 cup and top with granola, coconut flakes, and fresh fruit.
