Ingredients

For the Cottage Cheese Bagels
  • 1 cup Cottage Cheese full-fat or low-fat, drained if very watery
  • 1 1/2 cups Self-Rising Flour or all-purpose flour + 1 1/2 tsp baking powder + 1/4 tsp salt
  • 1/2 tsp Garlic Powder optional, for savory bagels
  • 1/4 tsp Onion Powder optional, for savory bagels
For the Topping
  • 1 large Egg beaten, for egg wash
  • 1 tbsp Water for egg wash
  • 2 tbsp Everything Bagel Seasoning or sesame seeds, poppy seeds, flaky salt

Equipment

  • Air Fryer
  • Large Mixing Bowl
  • Spoon/Spatula
  • Parchment Paper
  • Pastry brush

Method

Prepare the Dough
  1. In a large mixing bowl, combine the cottage cheese, self-rising flour, garlic powder, and onion powder (if using). Mix with a spoon or spatula until a shaggy dough forms.
  2. Turn the dough out onto a lightly floured surface. Knead gently for 2-3 minutes until the dough comes together and is mostly smooth. Avoid over-kneading.
  3. Divide the dough into 4 equal pieces. Roll each piece into a rope about 6-7 inches long. Bring the ends together to form a circle and pinch firmly to seal the seam, creating a bagel shape.
Air Fry
  1. In a small bowl, whisk the beaten egg with 1 tablespoon of water to create an egg wash. Line your air fryer basket with parchment paper (if desired, or spray with non-stick spray).
  2. Brush each bagel generously with the egg wash. Sprinkle the tops with everything bagel seasoning (or desired topping).
  3. Preheat your air fryer to 350°F (175°C) for 2-3 minutes. Place 2-3 bagels in the air fryer basket, ensuring they are not overcrowded. Air fry for 12-15 minutes, flipping halfway through, until golden brown and cooked through. Repeat with remaining bagels.
  4. Allow the Cottage Cheese Bagels to cool slightly on a wire rack before slicing and serving with your favorite toppings like cream cheese, avocado, or jam.

Notes

If you don't have self-rising flour, you can make your own by combining 1 1/2 cups all-purpose flour with 1 1/2 teaspoons baking powder and 1/4 teaspoon salt. For oven baking, preheat oven to 375°F (190°C) and bake for 20-25 minutes, or until golden. Store leftover bagels in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. They can also be frozen for longer storage.
