Season the Chicken
  1. In a separate small bowl, combine the all-purpose flour, smoked paprika, garlic powder, onion powder, dried oregano, salt, and black pepper. Whisk until evenly mixed.
  2. Sprinkle the seasoning mixture over the oiled chicken pieces in the large bowl. Toss thoroughly until each chicken bite is completely and evenly coated with the seasoning.
Bake the Chicken Bites
  1. Arrange the seasoned chicken bites in a single layer on the prepared baking sheet. Be sure not to overcrowd the pan; use two sheets if necessary. This allows the chicken to bake and crisp up rather than steam.
  2. Bake for 15-20 minutes, flipping the pieces halfway through, until the chicken is golden brown, cooked through, and has reached an internal temperature of 165°F (74°C). For extra crispiness, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
