Prepare the Filling
Assemble the Roll Ups
- Unroll the crescent dough on a clean work surface and separate it into 8 triangles along the perforations.
- Place a heaping tablespoon of the cranberry brie filling onto the wide end of each crescent dough triangle. Be careful not to overfill.
- Starting from the wide end, gently roll up each triangle towards the pointed tip. Pinch the seams to seal if necessary to prevent the filling from leaking.
Air Fry the Roll Ups
- Preheat your air fryer to 350°F (175°C) for about 3 minutes.
- In a small bowl, whisk together the egg and 1 tablespoon of water to create an egg wash. Lightly brush the tops and sides of each roll up with the egg wash for a golden, shiny finish.
- Place the roll ups in the air fryer basket in a single layer, ensuring they are not touching. You may need to cook in two batches depending on the size of your air fryer.
- Air fry for 6-8 minutes, or until the crescent dough is deep golden brown and cooked through.

Make-Ahead Tip: You can assemble the roll ups a few hours ahead of time. Place them on a parchment-lined baking sheet, cover with plastic wrap, and refrigerate. Brush with egg wash and air fry just before serving.
