Ingredients

For the Marinade
  • 0.5 cup soy sauce low sodium preferred
  • 0.25 cup olive oil
  • 0.25 cup Worcestershire sauce
  • 4 cloves garlic minced
  • 2 tbsp light brown sugar packed
  • 1 tbsp Dijon mustard
  • 2 tbsp red wine vinegar
  • 1 tsp black pepper freshly ground
  • 1 tsp onion powder
  • 0.5 tsp red pepper flakes optional, for a kick

Equipment

  • Large bowl or resealable bag
  • Whisk

Method

Prepare the Ingredients
  1. Peel and finely mince your garlic cloves. We want those flavors to really infuse the marinade!
  2. In a medium bowl, combine the low sodium soy sauce, olive oil, Worcestershire sauce, Dijon mustard, and red wine vinegar. Give it a quick whisk to start blending.
  3. Now add in the minced garlic, packed light brown sugar, freshly ground black pepper, onion powder, and red pepper flakes (if using). Whisk vigorously for 1-2 minutes until all ingredients are well combined and the sugar has dissolved. You want a smooth, emulsified mixture.
  4. Your flavorful steak marinade is ready to use! Pour it over your preferred cut of steak (about 1.5-2 pounds) in a resealable bag or a shallow dish. Make sure the steak is fully coated.

Notes

For best results, marinate steaks for at least 2 hours, or up to 24 hours in the refrigerator. Over-marinating can sometimes make steak mushy, so aim for that sweet spot!
This marinade works beautifully with a variety of steak cuts like flank steak, skirt steak, sirloin, or even tougher cuts like chuck roast that benefit from tenderizing. Adjust the red pepper flakes to your liking; omit for no heat, or add a full teaspoon for a spicier kick.
