- Line a baking sheet with parchment paper, ensuring it covers the entire surface to prevent sticking.
- In a large mixing bowl, combine the cold Greek yogurt, room temperature peanut butter, maple syrup, and vanilla extract.
- Stir vigorously with a spatula until all ingredients are thoroughly combined and the mixture is smooth and creamy. Make sure there are no streaks of peanut butter or yogurt.
- Using a spoon or a small cookie scoop (about 1.5 tablespoons per scoop), drop spoonfuls of the mixture onto the prepared parchment-lined baking sheet. Leave a small space between each bite.
- If desired, sprinkle mini chocolate chips (or any other toppings like chopped nuts or sprinkles) onto the top of each yogurt bite.
- Carefully transfer the baking sheet to the freezer. Freeze for at least 2-3 hours, or until the bites are completely firm.
- Once frozen solid, gently peel the bites off the parchment paper. They can be stored in an airtight freezer-safe container or a resealable bag in the freezer for up to 2-3 weeks.
