Ingredients
  

For the Sauce
  • 3 tbsp low-sodium soy sauce
  • 2 tbsp honey
  • 1 lemon juiced and zested
  • 1 tbsp cornstarch
  • 2 tbsp water
  • 1/4 tsp red pepper flakes optional, for heat
For the Stir-Fry
  • 1 1/2 lbs large shrimp peeled and deveined
  • 1 lb broccoli cut into florets
  • 3 cloves garlic minced
  • 1 tbsp ginger fresh, grated
  • 2 tbsp vegetable oil divided
  • 1 red bell pepper sliced
  • 3 green onions sliced, white and green parts separated
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 tbsp sesame seeds for garnish

Method
 

Prepare the Sauce
  1. In a small bowl, whisk together the soy sauce, honey, lemon juice, lemon zest, cornstarch, water, and red pepper flakes (if using) until smooth. Set aside.
Prepare the Ingredients
  1. Pat the shrimp dry with paper towels and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
  2. Cut broccoli into bite-sized florets. Slice the red bell pepper, mince the garlic, grate the ginger, and slice the green onions (keeping white and green parts separate).
Cook the Broccoli
  1. Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the broccoli and stir-fry for 3-4 minutes until bright green but still crisp.
  2. Add 2 tablespoons of water to the pan, cover quickly with a lid, and steam for 2 minutes until the broccoli is crisp-tender.
  3. Transfer broccoli to a plate and set aside.
Cook the Shrimp
  1. Add the remaining 1 tablespoon of oil to the skillet. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and just cooked through. Transfer to the plate with broccoli.
Bring It All Together
  1. In the same skillet, add a little more oil if needed. Add the garlic, ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant.
  2. Add the red bell pepper and stir-fry for 1-2 minutes until slightly softened.
  3. Return the shrimp and broccoli to the skillet. Give the sauce a quick stir and pour it into the skillet.
  4. Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
  5. Remove from heat and stir in the green parts of the green onions.
Serve
  1. Divide the stir-fry among plates, garnish with sesame seeds, and serve immediately over cooked rice or noodles if desired.

Notes

For an extra boost of flavor, you can add a splash of toasted sesame oil at the end or sprinkle with chopped fresh cilantro. Adjust the amount of red pepper flakes according to your heat preference.
