Prepare the Sauce
- In a small bowl, whisk together the soy sauce, honey, lemon juice, lemon zest, cornstarch, water, and red pepper flakes (if using) until smooth. Set aside.
Prepare the Ingredients
- Pat the shrimp dry with paper towels and season with 1/4 teaspoon salt and 1/8 teaspoon black pepper.
- Cut broccoli into bite-sized florets. Slice the red bell pepper, mince the garlic, grate the ginger, and slice the green onions (keeping white and green parts separate).
Cook the Broccoli
- Heat 1 tablespoon of oil in a large skillet or wok over medium-high heat. Add the broccoli and stir-fry for 3-4 minutes until bright green but still crisp.
- Add 2 tablespoons of water to the pan, cover quickly with a lid, and steam for 2 minutes until the broccoli is crisp-tender.
- Transfer broccoli to a plate and set aside.
Cook the Shrimp
- Add the remaining 1 tablespoon of oil to the skillet. Add the shrimp in a single layer and cook for 1-2 minutes per side until pink and just cooked through. Transfer to the plate with broccoli.
Bring It All Together
- In the same skillet, add a little more oil if needed. Add the garlic, ginger, and white parts of green onions. Stir-fry for 30 seconds until fragrant.
- Add the red bell pepper and stir-fry for 1-2 minutes until slightly softened.
- Return the shrimp and broccoli to the skillet. Give the sauce a quick stir and pour it into the skillet.
- Cook, stirring constantly, for 1-2 minutes until the sauce thickens and coats the shrimp and vegetables.
- Remove from heat and stir in the green parts of the green onions.
Serve
- Divide the stir-fry among plates, garnish with sesame seeds, and serve immediately over cooked rice or noodles if desired.
Notes
For an extra boost of flavor, you can add a splash of toasted sesame oil at the end or sprinkle with chopped fresh cilantro. Adjust the amount of red pepper flakes according to your heat preference.
