Garlic Parmesan Roasted Shrimp

Ingredients
  

For the Shrimp
  • 1.5 lbs large shrimp peeled, deveined, tails on or off, patted very dry
  • 2 tbsp olive oil extra virgin
For the Garlic Parmesan Coating
  • 4 cloves garlic minced (about 1.5 tbsp)
  • 1/4 cup grated Parmesan cheese freshly grated is best
  • 1 tsp dried oregano
  • 1/2 tsp dried basil
  • 1/4 tsp red pepper flakes optional, for a slight kick
  • 1/2 tsp salt or to taste
  • 1/4 tsp black pepper freshly ground, or to taste
For Garnish
  • 2 tbsp fresh parsley chopped
  • 1 lemon cut into wedges, for serving

Method
 

Prepare for Roasting
  1. Preheat oven to 400°F (200°C). Line a large baking sheet with parchment paper for easy cleanup.
Coat the Shrimp
  1. In a large mixing bowl, combine the minced garlic, grated Parmesan cheese, dried oregano, dried basil, red pepper flakes (if using), salt, and black pepper. Whisk gently to combine.
  2. Add the patted-dry shrimp to the bowl. Drizzle with olive oil. Toss well until all the shrimp are evenly coated with the garlic-parmesan mixture.
Roast the Shrimp
  1. Arrange the coated shrimp in a single layer on the prepared baking sheet. Make sure they are not overcrowded to ensure even cooking.
  2. Roast for 6-8 minutes, or until the shrimp are pink, opaque, and cooked through. Avoid overcooking, as shrimp can become rubbery.
Serve
  1. Remove from the oven. Garnish immediately with fresh chopped parsley. Serve hot with lemon wedges on the side, if desired.

Notes

For extra flavor, you can let the shrimp marinate in the garlic-parmesan mixture for 15-30 minutes in the refrigerator before roasting. Ensure shrimp are thoroughly patted dry before adding oil and seasoning to help the coating adhere better and prevent steaming.
