Ingredients
  

For the Gnocchi
  • 1 lb potato gnocchi refrigerated or shelf-stable
  • 2 tbsp olive oil divided
  • 1 tbsp unsalted butter
For the Salad
  • 2 cups cherry tomatoes halved
  • 8 oz fresh mozzarella pearls drained
  • 1 cup fresh basil leaves loosely packed, torn if large
For the Dressing
  • 3 tbsp extra-virgin olive oil
  • 1.5 tbsp balsamic glaze or aged balsamic vinegar
  • 1 clove garlic minced
  • 0.75 tsp kosher salt
  • 0.25 tsp black pepper freshly ground

Prep
  1. In a small bowl, whisk together the extra-virgin olive oil, balsamic glaze, minced garlic, salt, and pepper. Let sit at room temperature while you cook the gnocchi so the garlic mellows.
Cook the Gnocchi
  1. Bring a large pot of salted water to a boil. Add gnocchi and cook just until they float, about 2-3 minutes. Drain well and pat dry with paper towels - this is crucial for crisping. Heat 1 tablespoon olive oil and the butter in a large nonstick skillet over medium-high heat. Add gnocchi in a single layer and cook undisturbed until golden and crisp on one side, 3-4 minutes. Toss and continue cooking until most sides are browned and crispy, about 6-8 minutes total.
Assemble
  1. While gnocchi are still warm, transfer them to a large bowl. Add halved cherry tomatoes and mozzarella pearls. Pour the dressing over and toss gently to combine - the warm gnocchi will slightly soften the mozzarella in the best way.
  2. Tear the basil leaves over the salad and give one final gentle toss. Taste and adjust salt if needed. Serve immediately while the gnocchi are still warm against the cool tomatoes and cheese.

Notes

Don't skip drying the boiled gnocchi - excess moisture is the enemy of crispiness. If you can't find mozzarella pearls, tear a ball of fresh mozzarella into bite-sized pieces. The salad is best eaten right away, but you can prep the dressing and halve the tomatoes up to 4 hours ahead.
