Ingredients
  

Dry Ingredients
  • 1 3/4 cups almond flour blanched, super-fine
  • 2 tbsp psyllium husk powder
  • 1 1/2 tsp baking powder
  • 1/2 tsp salt
Wet Ingredients
  • 3 large eggs room temperature
  • 3 oz cream cheese softened
  • 1 tbsp apple cider vinegar
Optional Topping
  • 1 tbsp sesame seeds

Method
 

Prepare for Baking
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
Combine Dry Ingredients
  1. In a large mixing bowl, whisk together the almond flour, psyllium husk powder, baking powder, and salt until they are thoroughly combined.
Combine Wet Ingredients
  1. In a separate small bowl, whisk together the eggs, softened cream cheese, and apple cider vinegar until the mixture is smooth and well incorporated.
Form the Dough
  1. Pour the wet ingredients into the large bowl with the dry ingredients. Mix with a spoon or rubber spatula until a cohesive dough forms. The dough will be quite sticky at this stage.
  2. Let the dough rest for 5-10 minutes. This crucial step allows the psyllium husk to absorb moisture, causing the dough to firm up and become easier to handle.
Shape and Bake
  1. Divide the dough into 6 equal portions. With slightly wet hands (this helps prevent sticking), roll each portion into a smooth ball. Place them evenly spaced on the prepared baking sheet.
  2. If desired, sprinkle the tops of the rolls with sesame seeds for added flavor and texture.
  3. Bake for 20-25 minutes, or until the rolls are beautifully golden brown and cooked through. An internal temperature of around 200°F (93°C) indicates they are done.
  4. Remove from the oven and let cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy warm!

Notes

Ensure your cream cheese is very soft for easier mixing; a quick 10-15 second microwave can help if it's too firm. The dough is naturally sticky, so slightly wetting your hands makes forming the rolls much smoother. These rolls are best enjoyed warm but store well. Keep leftovers in an airtight container at room temperature for up to 2 days, or refrigerate for up to 5 days. Reheat gently in the microwave or a toaster oven.
