Ingredients
  

  • 1 cup carrots peeled and roughly chopped (about 2 medium carrots)
  • 1 large banana frozen (peeled and sliced before freezing for best results)
  • 1/2 cup unsweetened almond milk or other plant-based milk
  • 1/4 cup orange juice (optional, for extra tang and vitamin C)
  • 1/2 tsp ground cinnamon
  • 1/4 tsp ground ginger (optional, for a warming spice kick)
  • 1 tbsp maple syrup or honey (adjust to taste)
  • 1/2 cup ice cubes (optional, for extra chill and thickness)

Method
 

  1. Add the chopped carrots, frozen banana, almond milk, orange juice (if using), cinnamon, ginger (if using), and maple syrup to a high-speed blender.
  2. Blend on low speed, gradually increasing to high, until the mixture is completely smooth and creamy. Scrape down the sides of the blender with a spatula as needed to ensure all ingredients are incorporated.
  3. If the smoothie is too thick, add a little more almond milk (1-2 tablespoons at a time) and blend again until desired consistency is reached. If you prefer it colder or thicker, add the ice cubes and blend until smooth.
  4. Pour immediately into two glasses and serve.

Notes

For an extra boost of nutrition, add 1 tablespoon of chia seeds or flax seeds. You can also add a scoop of vanilla protein powder for a more filling meal replacement. To make this smoothie ahead, prepare all ingredients and store them in the fridge overnight (except ice), then blend in the morning. Best served fresh.
