For the Smoothie
  • 1 cup unsweetened almond milk
  • 1.5 cup fresh spinach packed
  • 1 medium frozen banana sliced
  • 0.5 green apple cored, roughly chopped
  • 0.5 cup cucumber chopped
  • 0.5 inch fresh ginger peeled, roughly chopped
  • 1 tbsp freshly squeezed lemon juice
  • 1 tsp chia seeds
  • 0.5 cup ice cubes

Method
 

Prep and Blend
  1. Wash your spinach, green apple, and cucumber thoroughly. Core and roughly chop the apple. Peel and roughly chop the fresh ginger.
  2. Add the unsweetened almond milk to your high-speed blender first. This helps with smoother blending and protects the blades.
  3. Next, add the fresh spinach, followed by the frozen banana slices, chopped green apple, chopped cucumber, fresh ginger, freshly squeezed lemon juice, and chia seeds.
  4. Top with the ice cubes. The ice will help make the smoothie extra cold and thick.
  5. Secure the lid and blend on high speed for 1-2 minutes, or until the smoothie is completely smooth and creamy, with no leafy chunks visible. You might need to stop and scrape down the sides with a spatula if ingredients stick.
  6. If the smoothie is too thick, add a splash more almond milk (1-2 tablespoons at a time) and blend again until you reach your desired consistency. Pour into a tall glass and enjoy immediately.

Notes

Feel free to swap spinach for kale if you prefer a bolder, slightly more bitter green. If you don't have frozen banana, use a fresh one and add a bit more ice. For a protein boost, add a scoop of your favorite plant-based protein powder before blending.
