Ingredients
  

For the Grilled Chickpeas & Veggies
  • 1 15-oz can canned chickpeas drained and rinsed
  • 2 tbsp olive oil
  • 1 tsp smoked paprika
  • 0.5 tsp ground cumin
  • 0.5 tsp garlic powder
  • 0.5 tsp salt
  • 0.25 tsp black pepper
  • 1 medium red bell pepper cored and sliced into strips
  • 1 small zucchini sliced into half-moons
For the Lemon-Herb Yogurt Sauce
  • 0.5 cup plain Greek yogurt
  • 1 tbsp lemon juice freshly squeezed
  • 2 tbsp fresh parsley finely chopped
For Assembly
  • 4 small pita breads

Method
 

Prep the Chickpeas & Veggies
  1. Drain and rinse the canned chickpeas thoroughly. In a large bowl, combine the drained chickpeas, red bell pepper strips, and zucchini half-moons. Drizzle with olive oil, then sprinkle in the smoked paprika, ground cumin, garlic powder, salt, and black pepper. Toss well to ensure everything is evenly coated.
Make the Lemon-Herb Yogurt Sauce
  1. In a small bowl, whisk together the Greek yogurt, fresh lemon juice, and finely chopped fresh parsley. Season with a tiny pinch of salt and pepper to taste. Set aside.
Grill the Veggies & Chickpeas
  1. Preheat your grill pan or outdoor grill to medium-high heat. Once hot, add the seasoned chickpeas and vegetables in a single layer, working in batches if necessary to avoid overcrowding. Grill for 8-12 minutes, turning occasionally, until the veggies are tender-crisp and show nice grill marks, and the chickpeas are lightly browned and slightly crispy.
Warm the Pita
  1. While the chickpeas and veggies are grilling, quickly warm the pita breads on the grill for 30 seconds to 1 minute per side, just until they are soft and pliable. You can also do this in a dry skillet or a toaster.
Assemble the Pitas
  1. To assemble, spread a generous spoonful of the lemon-herb yogurt sauce inside each warm pita. Fill with the grilled chickpea and veggie mixture. Serve immediately and enjoy!

Notes

Make Ahead Tip: You can prep the sauce and chop all the vegetables ahead of time. Store them separately in airtight containers in the fridge for up to 2 days. Then, just grill and assemble when ready to eat!
Substitution Ideas: Feel free to customize your veggies! Eggplant, cherry tomatoes, or mushrooms would also be delicious grilled alongside the chickpeas. A sprinkle of crumbled feta cheese inside the pita adds a lovely salty kick.
No Grill? No Problem! If you don't have a grill or grill pan, you can roast the seasoned chickpeas and veggies on a baking sheet in the oven at 400°F (200°C) for 15-20 minutes, flipping halfway, until tender and lightly browned.
