Ingredients
  

For the Hot Honey Ground Beef
  • 1.5 lbs Ground Beef 80/20 lean recommended
  • 1 tbsp Olive Oil
  • 1 tsp Garlic Powder
  • 1 tsp Onion Powder
  • 1 tsp Smoked Paprika
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper freshly ground
  • 1/4 cup Hot Honey
  • 1 tbsp Soy Sauce low sodium preferred
For the Bowls
  • 1.5 cups Uncooked Jasmine Rice or white rice
  • 3 cups Water for cooking rice
  • 1 large Cucumber diced
  • 3 Scallions sliced
  • 1 tsp Sesame Seeds toasted, for garnish (optional)

Method
 

Prepare the Rice and Toppings
  1. Rinse the jasmine rice thoroughly under cold water until the water runs clear. Combine the rinsed rice and 3 cups of water in a medium saucepan. Bring to a boil, then reduce heat to low, cover, and simmer for 15-18 minutes, or until all water is absorbed. Remove from heat and let stand, covered, for 5 minutes. Fluff with a fork.
  2. While the rice cooks, dice the cucumber and slice the scallions. Set aside.
Cook the Hot Honey Ground Beef
  1. Heat olive oil in a large skillet over medium-high heat. Add the ground beef and break it apart with a spoon. Cook, stirring occasionally, until browned and no pink remains, about 7-9 minutes.
  2. Carefully drain any excess grease from the skillet.
  3. Reduce the heat to medium. Stir in the garlic powder, onion powder, smoked paprika, salt, and black pepper. Cook for 1 minute, stirring constantly, until fragrant.
  4. Pour in the hot honey and soy sauce. Stir well to coat the ground beef evenly. Let it simmer for 2-3 minutes, allowing the sauce to thicken slightly and glaze the beef.
Assemble the Bowls
  1. Divide the cooked rice among four serving bowls.
  2. Top each bowl generously with the hot honey ground beef.
  3. Garnish with diced cucumber, sliced scallions, and a sprinkle of toasted sesame seeds, if desired.
  4. Serve immediately and enjoy!

Notes

For a spicier kick, add a pinch of red pepper flakes with the other seasonings. If you don't have hot honey, you can make your own by warming regular honey and stirring in a dash of cayenne pepper to taste. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days.
