Prepare the Base
- Heat olive oil in a large Dutch oven or stockpot over medium-high heat. Add Italian sausage, breaking it up with a spoon as it cooks, until no longer pink, about 5-7 minutes. Drain any excess grease and set the sausage aside.
- Add chopped onion, diced carrots, and diced celery to the same pot. Cook over medium heat, stirring occasionally, until vegetables are softened, about 8-10 minutes.
- Stir in minced garlic and cook for another minute until fragrant.
Simmer the Soup
- Return the cooked Italian sausage to the pot. Add crushed tomatoes, chicken broth, dried basil, dried oregano, red pepper flakes (if using), salt, and black pepper. Stir well to combine.
- Bring the soup to a simmer, then reduce heat to low, cover, and let it cook for at least 15 minutes to allow the flavors to meld.
Finish and Serve
- Add the tortellini to the simmering soup. Cook according to package directions, typically 3-5 minutes for fresh tortellini or 5-7 minutes for frozen, until al dente. Do not overcook.
- Stir in the fresh spinach until it wilts, about 1-2 minutes. Taste and adjust seasoning as needed.
