Hearty Southwestern Vegetarian Quesadillas

Ingredients
  

For the Vegetable Filling
  • 1 tbsp Olive Oil
  • 1 Onion diced
  • 1 Red Bell Pepper diced
  • 1 Green Bell Pepper diced
  • 8 oz Cremini Mushrooms sliced
  • 1 can Black Beans 15 oz, rinsed and drained
  • 1 cup Corn frozen or fresh
  • 1 tsp Chili Powder
  • 1/2 tsp Cumin
  • 1/4 tsp Smoked Paprika optional
  • 1/4 tsp Garlic Powder
  • 1/2 tsp Salt or to taste
  • 1/4 tsp Black Pepper or to taste
For the Quesadillas
  • 8 Flour Tortillas 8-inch diameter
  • 2 cups Shredded Cheese Monterey Jack, Cheddar, or Mexican blend
  • 1 tbsp Olive Oil or butter, for cooking quesadillas
Optional Toppings
  • Salsa
  • Guacamole or sliced avocado
  • Sour Cream or plain Greek yogurt
  • Fresh Cilantro chopped

Method
 

Prepare the Filling
  1. Heat 1 tablespoon of olive oil in a large skillet over medium heat. Add the diced onion, red bell pepper, and green bell pepper. Sauté for 5-7 minutes, until vegetables begin to soften.
  2. Add the sliced mushrooms to the skillet and continue to cook for another 5-8 minutes, stirring occasionally, until mushrooms have released their moisture and started to brown.
  3. Stir in the rinsed and drained black beans, corn, chili powder, cumin, smoked paprika (if using), garlic powder, salt, and black pepper. Cook for 3-5 minutes, stirring to combine and heat through the beans and corn, allowing the flavors to meld. Remove from heat and set aside.
Assemble and Cook Quesadillas
  1. Wipe out the skillet if necessary, or use a clean one. Heat 1/2 tablespoon of olive oil (or butter) in the skillet over medium heat.
  2. Place one flour tortilla in the hot skillet. Sprinkle about 1/4 cup of shredded cheese over half of the tortilla. Spoon approximately 1/4 of the vegetable filling over the cheese.
  3. Sprinkle another 1/4 cup of shredded cheese over the vegetable filling. Fold the other half of the tortilla over the filling to create a half-moon shape.
  4. Cook for 3-5 minutes per side, or until the tortilla is golden brown and crispy, and the cheese is thoroughly melted and gooey. Press down gently with a spatula to ensure even cooking.
  5. Remove the cooked quesadilla from the skillet and transfer to a cutting board. Repeat the process with the remaining tortillas, filling, and cheese, adding more olive oil/butter to the skillet as needed.
Serve
  1. Slice each quesadilla into 2 or 3 wedges. Serve immediately with your favorite toppings such as salsa, guacamole, sour cream, or fresh cilantro.

Notes

Storage: Leftover quesadillas can be stored in an airtight container in the refrigerator for up to 3 days. Reheat in a dry skillet, oven, or air fryer for best results to restore crispiness.
Variations: Feel free to customize the vegetables based on what you have on hand. Spinach, zucchini, or sweet potatoes (pre-cooked) would also be delicious additions. For a spicy kick, add a pinch of cayenne pepper or a diced jalapeño to the filling.
Cheese: Any good melting cheese will work. Pepper Jack adds a nice spice!
