Homemade Cosmic Brownies

Ingredients
  

For the Brownies
  • 1/2 cup unsalted butter melted
  • 1 cup granulated sugar
  • 1/2 cup brown sugar packed
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder Dutch-processed preferred
  • 1/4 tsp salt
  • 1/4 cup cornstarch
For the Ganache Topping
  • 1 cup semi-sweet chocolate chips
  • 1/3 cup heavy cream
  • 2 tbsp light corn syrup
  • 1 tbsp unsalted butter
For Decoration
  • 1/3 cup rainbow chocolate chips or rainbow sprinkles

Method
 

Prepare the Brownies
  1. Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
  2. In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
  3. Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
  4. In a separate bowl, whisk together the flour, cocoa powder, salt, and cornstarch.
  5. Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Do not overmix.
  6. Pour the batter into the prepared baking pan and spread evenly.
  7. Bake for 22-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).
  8. Allow the brownies to cool completely in the pan on a wire rack.
Prepare the Ganache
  1. In a microwave-safe bowl, combine the chocolate chips, heavy cream, corn syrup, and butter.
  2. Heat in the microwave in 30-second intervals, stirring between each, until the chocolate is melted and the mixture is smooth (about 1-2 minutes total).
  3. Let the ganache cool for about 5 minutes, until slightly thickened but still pourable.
Assemble and Finish
  1. Pour the ganache over the cooled brownies, using a spatula to spread it evenly to the edges.
  2. Immediately sprinkle the rainbow chocolate chips over the ganache before it sets.
  3. Refrigerate the brownies for at least 30 minutes to allow the ganache to set completely.
  4. Once set, use the parchment paper overhang to lift the brownies out of the pan. Cut into 16 equal squares with a sharp knife.

Notes

For the best results, refrigerate these brownies for at least 1 hour before serving to achieve optimal texture and flavor.
