Prepare the Brownies
- Preheat your oven to 350°F (175°C). Line an 8×8 inch baking pan with parchment paper, leaving some overhang for easy removal.
- In a large bowl, whisk together the melted butter, granulated sugar, and brown sugar until well combined.
- Add the eggs one at a time, whisking well after each addition. Stir in the vanilla extract.
- In a separate bowl, whisk together the flour, cocoa powder, salt, and cornstarch.
- Gradually add the dry ingredients to the wet ingredients, folding gently with a rubber spatula until just combined. Do not overmix.
- Pour the batter into the prepared baking pan and spread evenly.
- Bake for 22-25 minutes, or until a toothpick inserted in the center comes out with a few moist crumbs (but not wet batter).
- Allow the brownies to cool completely in the pan on a wire rack.
Prepare the Ganache
- In a microwave-safe bowl, combine the chocolate chips, heavy cream, corn syrup, and butter.
- Heat in the microwave in 30-second intervals, stirring between each, until the chocolate is melted and the mixture is smooth (about 1-2 minutes total).
- Let the ganache cool for about 5 minutes, until slightly thickened but still pourable.
Assemble and Finish
- Pour the ganache over the cooled brownies, using a spatula to spread it evenly to the edges.
- Immediately sprinkle the rainbow chocolate chips over the ganache before it sets.
- Refrigerate the brownies for at least 30 minutes to allow the ganache to set completely.
- Once set, use the parchment paper overhang to lift the brownies out of the pan. Cut into 16 equal squares with a sharp knife.
