Honey Banana Grilled Cheese Sandwich

Ingredients
  

  • 2 slices Brioche or Sourdough bread about 1/2-inch thick
  • 1 tbsp Unsalted Butter softened to room temperature
  • 2 oz Brie or creamy Havarti cheese thinly sliced
  • 1/2 Ripe Banana sliced into 1/4-inch rounds
  • 1 tbsp Honey plus more for drizzling if desired
  • 1/8 tsp Ground Cinnamon

Method
 

  1. Lay the two slices of bread on a clean work surface. Spread the softened butter evenly on one side of each slice. This will be the outside of your sandwich.
  2. Flip both bread slices over so the buttered sides are down. On one slice, arrange the cheese in a single, even layer, covering the bread to the edges. Arrange the sliced banana rounds over the cheese. Drizzle the honey evenly over the bananas, then sprinkle with the ground cinnamon.
  3. Place the second slice of bread on top, buttered-side up, to close the sandwich. Gently press down.
  4. Heat a non-stick skillet or griddle over medium-low heat. Carefully transfer the sandwich to the hot skillet. Cook for 3-4 minutes per side, or until the bread is a deep golden brown and crispy. The cheese should be completely melted and gooey.
  5. Remove the sandwich from the skillet and let it rest for one minute. This allows the cheese to set slightly. Slice in half diagonally and serve immediately.

Notes

For an extra decadent treat, use mascarpone cheese along with the Brie. Make sure your banana is ripe for sweetness but still firm enough to hold its shape when sliced. Adjust the heat as needed to prevent the bread from burning before the cheese has a chance to melt.
