- Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
- In a bowl, whisk together flour, baking powder, baking soda, and salt.
- In a separate bowl, beat butter, sugar, and honey until fluffy. Add eggs and vanilla, mixing well.
- Alternate adding flour mixture and buttermilk to the wet ingredients, mixing until just combined.
- Fold in diced peaches gently.
- Fill cupcake liners 2/3 full and bake for 18-20 minutes. Let cool completely.
- For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, honey, vanilla, and salt.
- Pipe or spread frosting onto cooled cupcakes and top with a fresh peach slice.
Notes
For a deeper flavor, try using brown butter in the cupcake batter. Store cupcakes in the fridge but let them sit at room temp before serving.
