  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 3/4 cup fresh peaches diced small
Cream Cheese Frosting
  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 pinch salt
  • fresh peach slices for garnish

Method
 

  1. Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
  2. In a bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In a separate bowl, beat butter, sugar, and honey until fluffy. Add eggs and vanilla, mixing well.
  4. Alternate adding flour mixture and buttermilk to the wet ingredients, mixing until just combined.
  5. Fold in diced peaches gently.
  6. Fill cupcake liners 2/3 full and bake for 18-20 minutes. Let cool completely.
  7. For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, honey, vanilla, and salt.
  8. Pipe or spread frosting onto cooled cupcakes and top with a fresh peach slice.

Notes

For a deeper flavor, try using brown butter in the cupcake batter. Store cupcakes in the fridge but let them sit at room temp before serving.
