Ingredients
  

Cupcakes

  • 1 1/2 cups all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup unsalted butter softened
  • 1/2 cup granulated sugar
  • 1/4 cup honey
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/2 cup buttermilk
  • 3/4 cup fresh peaches diced small

Cream Cheese Frosting

  • 8 oz cream cheese softened
  • 1/2 cup unsalted butter softened
  • 2 cups powdered sugar
  • 2 tbsp honey
  • 1 tsp vanilla extract
  • 1 pinch salt
  • fresh peach slices for garnish

Instructions
 

  • Preheat oven to 350°F (175°C). Line a cupcake pan with liners.
  • In a bowl, whisk together flour, baking powder, baking soda, and salt.
  • In a separate bowl, beat butter, sugar, and honey until fluffy. Add eggs and vanilla, mixing well.
  • Alternate adding flour mixture and buttermilk to the wet ingredients, mixing until just combined.
  • Fold in diced peaches gently.
  • Fill cupcake liners 2/3 full and bake for 18-20 minutes. Let cool completely.
  • For frosting, beat cream cheese and butter until smooth. Gradually add powdered sugar, honey, vanilla, and salt.
  • Pipe or spread frosting onto cooled cupcakes and top with a fresh peach slice.

Notes

For a deeper flavor, try using brown butter in the cupcake batter. Store cupcakes in the fridge but let them sit at room temp before serving.
