Hot Sausage Balls with Rotel and Cheddar

Spicy, cheesy, and impossible to stop eating - these party-perfect bites bake up golden and irresistible with a kick of Rotel heat.

Ingredients

  • 1 lb hot pork sausage bulk, not links
  • 2 cups sharp cheddar cheese finely shredded, packed
  • 1.5 cups Bisquick baking mix
  • 1 can Rotel diced tomatoes and green chilies 10 oz, drained very well
  • 4 oz cream cheese softened
  • 0.5 tsp garlic powder
  • 0.25 tsp black pepper freshly ground

  • Small cookie scoop or tablespoon

Method
 

Prep
  1. Open the Rotel and drain in a fine-mesh sieve, pressing gently with the back of a spoon to remove as much liquid as possible. Excess moisture makes soggy balls. Set aside.
Mix
  1. In a large bowl, combine the hot sausage, shredded cheddar, Bisquick, softened cream cheese, well-drained Rotel, garlic powder, and black pepper. Use your hands or a sturdy wooden spoon to mix until everything is evenly distributed and no streaks of cream cheese remain. The mixture will be sticky and thick.
Shape
  1. Line a baking sheet with parchment paper. Using a small cookie scoop or tablespoon, portion the mixture into 1-inch balls and roll gently between your palms to smooth. Place on the prepared sheet about 1 inch apart - they spread only slightly.
Bake
  1. Bake at 375F for 18-22 minutes, rotating the pan halfway through, until the balls are deep golden brown and cooked through. A few may crack slightly on top - that is perfect. Let cool on the pan for 5 minutes before serving - they firm up as they rest.

Notes

For maximum flavor, shred your own cheddar from a block rather than using pre-shredded. The anti-caking agents in bagged cheese can make the balls dry. These freeze beautifully - shape and freeze uncooked on a baking sheet, then transfer to a bag. Bake straight from frozen, adding 4-5 minutes. For milder heat, use original Rotel instead of hot, or swap in mild breakfast sausage.
