Prepare the Bananas and Yogurt
- Line a large baking sheet with parchment paper. This will prevent the frozen bites from sticking.
- Peel the bananas and slice them into approximately 1/2-inch (1.25 cm) thick rounds. You should get about 8-10 slices per banana, depending on their size.
- In a small bowl, combine the Greek yogurt, maple syrup (or honey if using), and vanilla extract (if using). Stir well until the mixture is smooth and evenly combined. Taste and adjust sweetness if desired.
Dip, Top, and Freeze
- Using a fork or a toothpick inserted into the edge, dip each banana slice into the prepared yogurt mixture, ensuring it's fully coated. Let any excess yogurt drip off briefly.
- Carefully place the yogurt-coated banana slice onto the prepared baking sheet. Immediately sprinkle with your chosen toppings (mini chocolate chips, chopped nuts, shredded coconut, crushed granola, or sprinkles) before the yogurt begins to set. Repeat this process for all banana slices.
- Place the baking sheet with the banana bites into the freezer for at least 2 hours, or until they are completely solid and firm.
Storage and Serving
- Once frozen, gently peel the bites off the parchment paper. Transfer them to a freezer-safe airtight container to prevent freezer burn.
- Store in the freezer for up to 2-3 weeks. Serve directly from the freezer and enjoy!
Notes
For an extra layer of flavor and decadence, drizzle a little melted dark chocolate over the frozen bites just before serving. Get creative with your toppings! Crushed freeze-dried fruit, a pinch of cinnamon sugar, or finely crushed cookies are also fantastic options. Ensure your bananas are firm enough to handle for dipping but ripe enough for natural sweetness. Overly ripe bananas might be too soft and mushy.
