For the Salad
  • 20 oz cheese tortellini fresh or frozen
  • 6 oz sliced salami cut into thin strips
  • 6 oz provolone cheese cubed
  • 8 oz cherry tomatoes halved
  • 0.5 cup pepperoncini sliced, plus 2 tbsp brine reserved
  • 0.5 cup red onion thinly sliced
  • 2 cups romaine lettuce chopped, for serving
For the Dressing
  • 0.33 cup olive oil extra virgin
  • 3 tbsp red wine vinegar
  • 2 tbsp pepperoncini brine reserved from jar
  • 1 tsp dried oregano
  • 2 cloves garlic minced
  • 0.75 tsp kosher salt
  • 0.5 tsp black pepper freshly ground

Method
 

Cook the Tortellini
  1. Bring a large pot of salted water to a boil. Cook tortellini according to package directions until just tender, usually 3-4 minutes for fresh or 7-9 for frozen. Drain immediately and rinse under cold water to stop cooking. Shake colander well to remove excess water, then spread tortellini on a clean kitchen towel to cool completely - about 10 minutes.
Make the Dressing
  1. In a large mixing bowl, whisk together olive oil, red wine vinegar, reserved pepperoncini brine, oregano, garlic, salt, and black pepper until emulsified - about 30 seconds of vigorous whisking. The brine adds that signature grinder tang, so don't skip it.
Assemble the Salad
  1. Add cooled tortellini to the bowl with dressing and toss to coat. Let sit 5 minutes so the warm pasta absorbs some flavor. Add salami, provolone, cherry tomatoes, pepperoncini, and red onion. Fold everything together gently but thoroughly.
  2. Let salad rest at room temperature for 15 minutes, or refrigerate up to 4 hours if making ahead. To serve, spoon over chopped romaine on individual plates or fold the lettuce in just before serving for a picnic-style presentation.

Notes

The pepperoncini brine is your secret weapon - it delivers that authentic sub shop tang that makes this taste like a true grinder. For the best texture, serve the same day you make it; the tortellini will soften if it sits in dressing overnight. Swap in cubed mozzarella for provolone if you prefer a milder cheese, or add chopped banana peppers for extra heat.
