Kielbasa and Rice Skillet

  • 14 oz kielbasa (Polish sausage), sliced into 1/2-inch rounds
  • 1.5 cups long-grain white rice not rinsed
  • 3 cups low-sodium chicken broth
  • 1 medium yellow onion, diced about 1 cup
  • 1 large red bell pepper, diced
  • 3 cloves garlic, minced
  • 1 tsp smoked paprika
  • 0.5 tsp dried thyme
  • 0.5 tsp black pepper freshly ground
  • 1 tbsp olive oil
  • 2 tbsp fresh parsley, chopped for garnish

Method
 

Cook the Kielbasa
  1. Heat the olive oil in a large deep skillet over medium-high heat. Add the kielbasa slices in a single layer and cook for 4-5 minutes, turning once, until both sides are nicely browned and the fat starts to render. Transfer to a plate and set aside.
Saute the vegetables
  1. Reduce heat to medium. Add the onion and bell pepper to the drippings in the pan. Saute for 5-6 minutes, stirring occasionally, until the onion turns translucent and the edges start to brown. Add the garlic, smoked paprika, thyme, and black pepper; cook for 30 seconds until fragrant.
Simmer the rice
  1. Stir in the rice and cook for 1 minute to toast slightly. Pour in the chicken broth and return the kielbasa to the pan, nestling it into the rice. Bring to a boil, then immediately reduce heat to low, cover tightly, and simmer for 18-20 minutes. Do not lift the lid. The rice is done when all liquid is absorbed and the grains are tender.
Finish and serve
  1. Remove from heat and let stand, covered, for 5 minutes. Fluff the rice with a fork, taste for seasoning (the kielbasa adds salt, so you likely won't need more), and sprinkle with fresh parsley before serving.

Notes

Use kielbasa straight from the fridge - it slices cleaner when cold. For extra depth, let the kielbasa get genuinely crispy and dark in spots; those browned bits flavor the whole dish. If the rice seems wet after cooking, replace the lid and let it steam off-heat for another 5 minutes rather than cooking longer, which can make it mushy.
