Ingredients
  

For the Zucchini
  • 2.5 lbs zucchini about 4 medium, sliced 1/4 inch thick
  • 1 tbsp kosher salt for sweating zucchini
For the Meat Sauce
  • 1.5 lbs ground beef 85% lean
  • 1 medium yellow onion diced
  • 4 cloves garlic minced
  • 14 oz crushed tomatoes canned, no sugar added
  • 2 tbsp tomato paste
  • 2 tsp dried Italian seasoning
  • 0.5 tsp crushed red pepper flakes optional
For the Cheese Layer
  • 15 oz ricotta cheese whole milk
  • 1 large egg beaten
  • 0.5 cup freshly grated Parmesan cheese divided
  • 2 cups shredded mozzarella cheese low moisture, divided
  • 0.25 cup fresh basil chopped, for garnish

Method
 

Prep the Zucchini
  1. Slice zucchini into 1/4-inch rounds. Lay in a single layer on paper towels, sprinkle with salt, and let sweat for 15 minutes. Pat completely dry with fresh towels - this prevents a watery casserole.
Make the Meat Sauce
  1. Heat a large skillet over medium-high heat. Add ground beef and cook, breaking up with a spoon, until no pink remains, about 6 minutes. Add onion and cook until softened, 4 minutes. Stir in garlic and cook 30 seconds until fragrant.
  2. Add crushed tomatoes, tomato paste, Italian seasoning, and red pepper flakes if using. Simmer for 8 minutes, stirring occasionally, until thickened and flavors meld. Taste and season with salt and black pepper.
Prepare Cheese Mixture
  1. In a bowl, combine ricotta, beaten egg, 1/4 cup Parmesan, and 1 cup mozzarella. Stir until smooth.
Assemble and Bake
  1. Preheat oven to 375 degrees F. Spread a thin layer of meat sauce in a 9x13 inch baking dish. Add half the zucchini in an overlapping layer. Spread half the ricotta mixture, then half the remaining meat sauce. Repeat layers once more.
  2. Finish with remaining 1 cup mozzarella and 1/4 cup Parmesan. Cover with foil and bake 25 minutes. Remove foil and bake 10 minutes more until cheese is bubbling and lightly golden. Let rest 10 minutes before garnishing with basil and serving.

Notes

Don't skip salting the zucchini - it's the difference between a sliceable casserole and soup on a plate. For extra flavor, use Italian sausage in place of half the ground beef. This reheats beautifully; make it Sunday and enjoy easy lunches all week.
