  • 2 medium Chicken breasts boneless, skinless, cut into chunks
  • 2 tablespoons Olive oil for cooking
  • 3 cloves Garlic minced
  • 1 cup Heavy cream
  • 1 cup Parmesan cheese freshly grated
  • 1/2 cup Sun-dried tomatoes chopped
  • 1 cup Chicken broth for thinning the sauce if needed
  • 8 oz Pasta (penne, linguine, or fusilli) cooked according to package instructions

Instructions
 

  • Season the chicken with salt, pepper, and Italian seasoning.
  • Heat olive oil in a skillet over medium heat. Cook the chicken until golden and fully cooked, about 6-7 minutes per side. Remove and set aside.
  • In the same skillet, add minced garlic and cook until fragrant, about 30 seconds.
  • Pour in the chicken broth to deglaze the pan. Scrape up any browned bits from the bottom.
  • Add heavy cream, grated Parmesan cheese, and sun-dried tomatoes. Stir everything together until it forms a smooth and creamy sauce.
  • Return the cooked chicken to the skillet and let it simmer in the sauce for 5-10 minutes.
  • Add the cooked pasta and toss everything together until well combined.
  • Serve warm, garnished with extra Parmesan and fresh basil if desired.

Notes

For extra flavor, add a pinch of red pepper flakes or a splash of white wine before simmering the sauce.
