Make the Dip
- In a large bowl, beat the softened cream cheese with a rubber spatula until completely smooth and no lumps remain, about 2 minutes. This step is crucial - cold cream cheese will leave you with a lumpy dip.
- Add the sour cream and mayonnaise to the bowl. Fold together until fully combined and silky, scraping down the sides as you go.
- Sprinkle in the ranch seasoning mix, garlic powder, and black pepper. Stir until the seasonings are evenly distributed throughout the cream cheese base.
- Add 3/4 of the crumbled bacon (reserve some for topping), 1 1/2 cups of the shredded cheddar (reserve 1/2 cup), and 3/4 of the sliced green onions. Fold gently until everything is evenly mixed - don't over-stir or the bacon will lose its crunch.
- Transfer to a serving bowl, cover, and refrigerate for at least 30 minutes to let the flavors meld. Before serving, top with the reserved bacon, cheddar, and green onions. Serve cold with crackers, sturdy chips, or vegetable sticks.
Notes
Make this dip up to 24 hours ahead - it actually gets better as it sits. For a lighter version, use Greek yogurt in place of sour cream, though the dip will be tangier. If you can't find ranch seasoning packets, mix 2 tablespoons dried parsley, 1 teaspoon each garlic powder and onion powder, 1/2 teaspoon dill, and 1/2 teaspoon salt.
