Mini Apple Pie

Ingredients
  

For the Filling
  • 2 medium Granny Smith apples peeled, cored, diced small
  • 3 tbsp granulated sugar
  • 0.5 tsp ground cinnamon
  • 1 tsp lemon juice freshly squeezed
  • 1 tsp cornstarch
For the Crust
  • 1 package refrigerated pie crust 14 oz, or homemade equivalent
  • 1 large egg beaten, for egg wash
  • 1 tbsp coarse sugar for topping

Method
 

Make the Filling
  1. Combine diced apples, sugar, cinnamon, lemon juice, and cornstarch in a medium saucepan. Cook over medium heat for 8-10 minutes, stirring occasionally, until apples soften slightly and liquid thickens. Remove from heat and cool completely - warm filling will make the dough soggy.
Assemble the Pies
  1. Preheat oven to 375 degrees F. Unroll pie crust on a lightly floured surface. Using a 3-inch round cutter, cut out 12 circles, rerolling scraps once if needed.
  2. Place 6 circles on a parchment-lined baking sheet. Spoon 1 heaping tablespoon of cooled filling onto each, leaving a 0.5-inch border. Brush edges with egg wash, top with remaining circles, and press firmly to seal. Crimp edges with a fork to prevent leaking.
  3. Cut 2 small slits in each pie top for steam to escape. Brush tops with remaining egg wash and sprinkle with coarse sugar. Bake 22-25 minutes until deep golden brown. Cool on the pan 10 minutes before serving.

Notes

For the flakiest crust, keep your dough cold - if it gets warm while cutting, pop it in the fridge for 10 minutes. The filling can be made up to 3 days ahead and refrigerated. These reheat beautifully in a 350 degree F oven for 8 minutes. Try adding a pinch of nutmeg or cardamom to the filling for extra warmth.
