Mocha Chocolate Cake

Ingredients
  

For the Cake
  • 2 cups all-purpose flour
  • 2 cups granulated sugar
  • 0.75 cup unsweetened cocoa powder Dutch-processed preferred
  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 tsp kosher salt
  • 1 cup strong brewed coffee cooled to room temperature
  • 0.5 cup whole milk room temperature
  • 0.5 cup vegetable oil
  • 2 large eggs room temperature
  • 2 tsp vanilla extract
For the Mocha Ganache
  • 8 oz semisweet chocolate finely chopped
  • 0.75 cup heavy cream
  • 1 tbsp espresso powder

Method
 

Prep
  1. Heat oven to 350°F. Grease two 9-inch round cake pans, line bottoms with parchment, and grease the parchment. Dust with cocoa powder and tap out excess.
  2. In a large bowl, whisk together flour, sugar, cocoa powder, baking powder, baking soda, and salt until no cocoa lumps remain.
  3. In a separate bowl, whisk coffee, milk, oil, eggs, and vanilla until combined. The mixture will look slightly curdled; this is normal.
  4. Pour wet ingredients into dry and whisk until just smooth, about 30 seconds. Do not overmix. Divide evenly between prepared pans.
  5. Bake 30-35 minutes until cakes spring back when lightly pressed and a toothpick comes out with a few moist crumbs. Cool in pans 10 minutes, then turn out onto racks to cool completely.
  6. Place chocolate in a heatproof bowl. Heat cream until steaming and small bubbles form at the edges. Pour over chocolate, add espresso powder, and let stand 2 minutes. Stir until glossy and smooth. Cool 15-20 minutes until thick but still pourable.
  7. Place one cake layer on a serving plate. Pour 1 cup ganache on top and spread to the edges. Add second layer and pour remaining ganache over the top, letting it drip down the sides. Use an offset spatula to smooth. Let set at room temperature 30 minutes before slicing.

Notes

For deeper coffee flavor, replace the brewed coffee with 1 cup hot water plus 2 tablespoons instant espresso dissolved in it. The cake layers can be baked a day ahead; wrap tightly in plastic and store at room temperature. For clean slices, dip your knife in hot water and wipe dry between cuts.
