Ingredients
  

Peppers

  • 4 bell peppers any color, tops cut off and seeds removed

Filling

  • 1 lb ground beef or ground turkey
  • 4 slices bacon cooked and crumbled
  • 1 cup mushrooms finely chopped
  • 1/2 cup onion chopped
  • 2 cloves garlic minced
  • 1/2 cup BBQ sauce
  • 1 tbsp Worcestershire sauce
  • 1/3 cup bread crumbs
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1 cup cheddar cheese shredded, plus extra for topping

Instructions
 

  • Preheat oven to 375°F (190°C). Grease a large baking dish.
  • Prepare the bell peppers by cutting off the tops and removing the seeds. Set them in the baking dish.
  • Cook the bacon in a frying pan until crispy. Remove, crumble, and set aside.
  • In the same pan, cook the ground beef with onions and garlic until browned. Drain excess fat.
  • Add the chopped mushrooms and cook for 3-4 minutes until soft.
  • Stir in BBQ sauce, Worcestershire sauce, salt, pepper, and paprika. Mix well.
  • Remove from heat and stir in the crumbled bacon, bread crumbs, and shredded cheese.
  • Stuff each pepper with the filling, pressing down slightly to pack it in.
  • Top each stuffed pepper with extra shredded cheese.
  • Bake uncovered for 25-30 minutes, or until the peppers are tender and the cheese is melted.
  • Remove from oven and let cool for a few minutes before serving. Enjoy!

Notes

For softer peppers, parboil them for 3-5 minutes before stuffing. Try using different cheeses for unique flavors!
