Nectarine Muffins

Dry Ingredients
  • 1.5 cups all-purpose flour
  • 0.5 cup granulated sugar plus 1 tablespoon for topping, divided
  • 1.5 tsp baking powder
  • 0.5 tsp salt
  • 0.5 tsp ground cinnamon plus 0.25 teaspoon for topping, divided
Wet Ingredients
  • 0.5 cup whole milk
  • 0.25 cup vegetable oil
  • 1 large egg room temperature
  • 1 tsp vanilla extract
Fresh Nectarines
  • 2 medium nectarines diced into 1/2-inch pieces (about 1.5 cups)

Method
 

Prep
  1. Preheat your oven to 400°F (200°C). Line a standard 12-cup muffin tin with paper liners, or lightly grease each cup. If using, combine 1 tablespoon granulated sugar and 0.25 teaspoon ground cinnamon in a small bowl for the topping and set aside.
  2. In a large mixing bowl, whisk together the flour, 0.5 cup granulated sugar, baking powder, 0.5 teaspoon salt, and 0.5 teaspoon ground cinnamon until well combined.
  3. In a separate medium bowl, whisk together the milk, vegetable oil, large egg, and vanilla extract until smooth.
  4. Pour the wet ingredients into the dry ingredients. Stir with a spatula or wooden spoon just until the flour mixture is moistened. The batter will be lumpy, and that's perfectly fine – avoid overmixing!
  5. Gently fold in the diced nectarines. Stir just enough to distribute them evenly throughout the batter.
  6. Divide the batter evenly among the 12 prepared muffin cups, filling each about two-thirds full. If using the cinnamon-sugar topping, sprinkle a small amount over the top of each muffin.
  7. Bake for 18-22 minutes, or until the muffins are golden brown and a wooden skewer inserted into the center of a muffin comes out clean. Baking at a slightly higher temperature initially helps create that lovely domed top.
  8. Let the muffins cool in the tin for 5 minutes before transferring them to a wire rack to cool completely. Enjoy warm or at room temperature!

Notes

Don't overmix your batter! Overmixing develops gluten, leading to tough muffins. A few lumps are good!.
Use ripe but firm nectarines. If they're too soft, they'll become mushy in the muffins. If you don't have nectarines, peaches make a fantastic substitute. No need to peel either fruit, their skins soften beautifully when baked.
Store leftover muffins in an airtight container at room temperature for up to 3 days, or freeze for up to 3 months. Reheat briefly in the microwave or oven for a fresh-baked taste.
