  • 1/2 cup plain Greek yogurt full-fat or low-fat
  • 1/2 cup ice cubes
  • 1 to 2 teaspoons honey or maple syrup optional, to taste
  • 1/2 teaspoon vanilla extract
  • 1 tablespoon chia seeds optional, for added nutrition
  • small pinch salt optional, balances flavors

  1. First things first, let's get those beautiful nectarines ready. Wash them well, then carefully slice them in half, remove the pit, and roughly chop the flesh into smaller pieces. No need to peel them, the skin adds great color and nutrients!
  2. Now, grab your trusty blender. Add the chopped nectarines, unsweetened almond milk, plain Greek yogurt, ice cubes, vanilla extract, and that tiny pinch of salt (if using) into the blender carafe.
  3. If your nectarines aren't super sweet or you prefer a sweeter smoothie, drizzle in 1 to 2 teaspoons of honey or maple syrup now. You can always add more later if needed.
  4. For an extra nutritional kick, toss in a tablespoon of chia seeds or your favorite protein powder at this stage.
  5. Secure the lid on your blender and blend on high speed until the mixture is completely smooth and creamy. This usually takes about 30-60 seconds. You want no chunks of fruit left behind!
  6. Taste the smoothie. If it's too thick, add a splash more milk. If it's not sweet enough, add a touch more honey or maple syrup and blend briefly. Pour into glasses and serve immediately. Enjoy your refreshing creation!

Notes

For an even colder, thicker smoothie, use frozen nectarine pieces. Just chop ripe nectarines and freeze them on a baking sheet before transferring to a freezer bag. You might need a little less ice if using frozen fruit. Feel free to swap nectarines for peaches or even apricots when they're in season. You can also boost the protein by adding a scoop of your favorite vanilla or unflavored protein powder. For a veggie boost without altering the flavor too much, a handful of fresh spinach blends in seamlessly!
