Ingredients
  

Wet Ingredients
  • 1 cup Nutella
  • 0.5 cup unsalted butter softened, 1 stick
  • 0.5 cup granulated sugar
  • 1 large egg room temperature
  • 1 tsp vanilla extract
Dry Ingredients
  • 1.5 cups all-purpose flour spooned and leveled
  • 0.5 tsp baking soda
  • 0.25 tsp salt
For Rolling
  • 0.25 cup granulated sugar for coating

Method
 

Prep
  1. Preheat oven to 350F. Line two baking sheets with parchment paper.
  2. In a large bowl, beat Nutella, softened butter, and sugar on medium speed until creamy and well combined, about 2 minutes. Scrape down the bowl, then beat in the egg and vanilla until smooth.
  3. Add flour, baking soda, and salt. Mix on low just until no dry streaks remain. The dough will be thick and slightly sticky.
  4. Scoop rounded tablespoons of dough and roll into balls. Roll each ball in the 1/4 cup granulated sugar to coat completely. Place 2 inches apart on prepared baking sheets.
  5. Bake 10-12 minutes until the edges look set and the tops are crackled but the centers still look slightly underdone. They will firm up as they cool.
  6. Let cookies rest on the baking sheet for 5 minutes, then transfer to a wire rack to cool completely.

Notes

For extra fudgy centers, pull the cookies out when the middles still look glossy and soft - they will look underbaked but set up perfectly as they cool. The dough can be refrigerated for up to 3 days or frozen for up to 2 months; bake from frozen, adding 2-3 minutes. For a pretty finish, press a few chocolate chips or chopped hazelnuts into the tops right after baking.
