Prepare the Morels & Chicken
- If using dried morels, place them in a small heatproof bowl and cover with 1 cup of hot water. Let rehydrate for 20-30 minutes. Gently remove morels, reserving the soaking liquid. Strain the soaking liquid through a fine-mesh sieve or coffee filter to remove any grit, then set aside. Rinse rehydrated morels under cold water, gently squeezing out excess liquid. Halve or quarter larger morels. If using fresh morels, gently brush off any dirt and rinse quickly under cold water. Pat dry and halve or quarter as needed.
- Pat chicken breasts dry thoroughly with paper towels. Season both sides generously with 1/2 tsp salt and 1/4 tsp black pepper.
Cook the Chicken
- Heat olive oil in a large skillet over medium-high heat until shimmering.
- Add chicken breasts to the hot skillet and sear for 5-7 minutes per side, or until golden brown and cooked through (internal temperature reaches 165°F / 74°C). Adjust heat as needed to prevent burning. Cook in batches if necessary to avoid crowding the pan.
- Remove chicken from the skillet and transfer to a plate. Tent loosely with foil to keep warm and let rest while you make the sauce.
Make the Morel Mushroom Sauce
- Reduce heat to medium. Add butter to the same skillet, scraping up any browned bits (fond) from the chicken. This adds flavor to your sauce.
- Add minced shallot and cook for 2-3 minutes until softened and fragrant. Add minced garlic and cook for another minute until fragrant, being careful not to burn the garlic.
- Stir in the prepared morel mushrooms and cook for 3-5 minutes, stirring occasionally, until they release their aroma and start to soften.
- Pour in the dry white wine, scraping up any remaining fond from the bottom of the pan with a wooden spoon or spatula. Let simmer for 2-3 minutes until the wine has mostly reduced.
- Add chicken broth (and the strained morel soaking liquid, if you used dried morels). Bring to a simmer and cook for 5-7 minutes, allowing the sauce to reduce slightly.
- Stir in the heavy cream. Bring back to a gentle simmer. If a thicker sauce is desired, whisk together cornstarch and cold water in a small bowl, then gradually whisk into the simmering sauce. Cook for 1-2 minutes until slightly thickened.
- Remove from heat. Stir in fresh chives and parsley. Taste and adjust seasoning with additional salt and pepper as needed.
Serve
- Spoon the creamy morel mushroom sauce generously over the rested chicken breasts.
- Serve immediately with your favorite sides like mashed potatoes, rice pilaf, or steamed asparagus to soak up the delicious sauce.
Notes
For best results with dried morels, use high-quality ones and ensure to strain the soaking liquid very well to avoid any grit in your sauce. This dish pairs wonderfully with a light-bodied white wine like the one used in the sauce. For an extra touch of flavor, a splash of brandy can be added before the white wine.
