Ingredients
  

For the Salmon
  • 1.5 lbs salmon fillets skin-on or off (about 4 portions)
  • 1 tbsp olive oil
  • 1/2 tsp salt
  • 1/4 tsp black pepper freshly ground
For the Parmesan Crust
  • 1/2 cup grated Parmesan cheese freshly grated preferred
  • 2 tbsp panko breadcrumbs
  • 2 tbsp mayonnaise full-fat recommended
  • 1 tbsp fresh parsley finely chopped
  • 1 clove garlic minced
  • 1/2 tsp Dijon mustard
  • 1/4 tsp dried oregano
  • pinch red pepper flakes optional

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
  2. Pat the salmon fillets thoroughly dry with paper towels. This helps achieve a crispier crust.
  3. Place the salmon fillets on the prepared baking sheet. Drizzle with olive oil and season evenly with salt and black pepper.
Make the Parmesan Crust
  1. In a small mixing bowl, combine the grated Parmesan cheese, panko breadcrumbs, mayonnaise, chopped fresh parsley, minced garlic, Dijon mustard, dried oregano, and red pepper flakes (if using).
  2. Mix well with a fork until all ingredients are thoroughly combined and form a thick paste-like mixture.
Bake the Salmon
  1. Evenly spread the Parmesan crust mixture over the top of each salmon fillet, gently pressing it down to adhere.
  2. Bake for 12-15 minutes, or until the salmon is cooked through and flakes easily with a fork, and the Parmesan crust is golden brown and crispy. Cooking time will vary depending on the thickness of your salmon fillets.
  3. For an extra golden crust, you can broil for the last 1-2 minutes, watching carefully to prevent burning.
  4. Remove from the oven and serve immediately.
