Ingredients

For the Salad
  • 3-4 ripe peaches sliced
  • 2 balls burrata cheese 8 oz total, at room temperature
  • 0.5 cup fresh basil leaves packed, torn
For the Dressing & Garnish
  • 0.5 cup balsamic vinegar
  • 1 tsp honey or maple syrup
  • 2 tbsp extra virgin olive oil
  • 0.5 tsp flaky sea salt
  • 0.25 tsp freshly ground black pepper

Equipment

  • Cutting board
  • Sharp knife
  • Small saucepan
  • Serving Platter

Method

Prepare the Balsamic Glaze
  1. Combine the balsamic vinegar and honey in a small saucepan. Bring the mixture to a gentle simmer over medium-low heat. Let it reduce for about 8-10 minutes, stirring occasionally, until it thickens to a syrupy consistency that coats the back of a spoon. Remove from heat and let it cool completely; it will thicken further as it cools.
Assemble the Salad
  1. Gently slice your ripe peaches into beautiful wedges or half-moon shapes. You want them thin enough to enjoy easily but still substantial enough to hold their shape.
  2. Artfully arrange the peach slices on a large serving platter or individual plates, creating an inviting base for the other ingredients.
  3. Drain the burrata balls and gently tear them open with your hands, revealing their creamy, luscious centers. Place the torn burrata pieces among the peaches.
  4. Generously scatter the fresh basil leaves over the peaches and burrata. The aroma alone is a treat!
  5. Drizzle the entire salad with a good quality extra virgin olive oil. This adds richness and helps balance the flavors.
  6. Finish by sprinkling flaky sea salt and freshly ground black pepper over everything. Don't be shy with the salt; it enhances the sweetness of the peaches.
  7. Just before serving, drizzle with the cooled balsamic glaze. Serve immediately and get ready for rave reviews!

Notes

No fresh peaches? Nectarines or even plums make fantastic substitutes, offering a similar sweet-tart balance. Just make sure they're ripe! Assemble the salad just before serving to ensure the burrata is at its creamiest and the basil is fresh. You can make the balsamic glaze ahead of time and store it in an airtight container at room temperature for up to two weeks. For an extra layer of flavor and crunch, consider adding a handful of toasted pine nuts or a sprinkle of chili flakes if you like a little heat.
