Ingredients

For the Smoothie
  • 2 cups frozen sliced peaches
  • 1 inch piece fresh ginger peeled
  • 1 cup unsweetened almond milk
  • 1 tbsp maple syrup or to taste, optional
  • 1 tsp fresh lime juice
  • 1/2 cup ice cubes optional, for extra chill or if peaches aren't fully frozen

Equipment

  • High-Speed Blender

Method

Prepare Ingredients
  1. First things first, let's get that ginger ready! Use a spoon to easily scrape the skin off your fresh ginger piece, then give it a rough chop. No need to be precise, your blender will do the rest.
  2. Toss the frozen sliced peaches, chopped fresh ginger, unsweetened almond milk, maple syrup (if you're using it), and fresh lime juice into your high-speed blender.
  3. If you like your smoothie extra frosty, or if your peaches weren't completely rock-solid frozen, now's the time to add the optional ice cubes.
  4. Secure the lid tightly and blend on high speed until the mixture is completely smooth and creamy. Start on a lower speed to break down the frozen ingredients, then gradually increase to high for that perfect consistency. You might need to use the tamper attachment if your blender has one.
  5. Give your smoothie a quick taste test. If you prefer it a bit sweeter, add another splash of maple syrup. If it's too thick for your liking, add a little more almond milk, about a tablespoon at a time, and blend briefly until it reaches your desired consistency.
  6. Pour the perfectly blended peach ginger smoothie into two glasses and serve it up right away to enjoy its frosty, vibrant flavor.

Notes

For an extra nutritional punch, toss in a handful of fresh spinach! You won't even taste it, but you'll get a lovely boost of vitamins and minerals.
If you have ripe fresh peaches on hand, feel free to use them! Just be sure to add an extra 1/2 to 1 cup of ice to get that desired frosty texture.
Don't have maple syrup? Honey or agave nectar are great alternatives for sweetening, or you can even blend in a date or two for natural sweetness.
