Ingredients
  

For the Peach Syrup
  • 2 lbs peaches ripe, peeled, pitted, and roughly chopped
  • 1.5 cups granulated sugar
  • 1.5 cups water
  • 0.25 tsp fine sea salt
For the Lemonade
  • 1.5 cups fresh lemon juice from about 8-10 large lemons
  • 4 cups cold water
  • ice for serving
  • fresh peach slices for garnish (optional)
  • fresh mint sprigs for garnish (optional)

Method
 

Make the Peach Syrup
  1. In a large saucepan, combine the chopped peaches, granulated sugar, 1.5 cups of water, and fine sea salt. Bring the mixture to a simmer over medium heat, stirring occasionally until the sugar dissolves.
  2. Reduce heat to low, cover, and let the peaches cook for 15-20 minutes, or until they are very soft and easily mashable with a spoon. Remove from heat.
  3. Carefully transfer the cooked peach mixture to a blender. Blend until completely smooth. Be cautious when blending hot liquids – ensure the lid is secure and start on low speed, gradually increasing.
  4. Pour the blended peach syrup through a fine-mesh sieve into a clean bowl or pitcher, pressing down on the solids with a spoon or spatula to extract as much liquid as possible. Discard the pulp. Allow the syrup to cool completely to room temperature, then refrigerate until chilled (at least 1 hour).
Assemble the Lemonade
  1. In a large pitcher, combine the chilled peach syrup, freshly squeezed lemon juice, and 4 cups of cold water. Stir well to combine.
  2. Taste the lemonade and adjust sweetness or tartness as desired (you can add a splash more cold water for less sweetness, or a bit more lemon juice for more tartness). Serve immediately over plenty of ice, garnished with fresh peach slices and mint sprigs if desired.

Notes

Peach Perfection: For the best flavor, use ripe, juicy peaches. If fresh peaches aren't in season, you can use frozen sliced peaches (no need to thaw) – just be sure to check for added sugar.
Make Ahead Magic: The peach syrup can be made up to 3-4 days in advance and stored in an airtight container in the refrigerator. This makes assembly quick and easy when you're ready to serve.
Adult Twist: For a delightful adult beverage, add a shot of bourbon, vodka, or white rum to individual servings.
