Prep the Fruit
- Carefully peel, pit, and finely dice your ripe peaches and mangoes. Aim for pieces about 1/4 to 1/2 inch in size. Place them in a large mixing bowl.
- Finely dice the red bell pepper and red onion. Mince the jalapeño, removing the seeds and white membrane for less heat, or leaving some in if you prefer a spicier salsa. Chop the fresh cilantro. Add all these prepped ingredients to the bowl with the fruit.
- Pour the freshly squeezed lime juice over the fruit and vegetable mixture. Sprinkle with salt. Gently stir everything together until well combined. Be careful not to mash the delicate fruit.
- Taste the salsa and adjust the seasoning as needed. You might want a little more lime juice for brightness, or a pinch more salt to enhance the flavors.
- For the best flavor, cover the bowl and refrigerate the salsa for at least 15-30 minutes before serving. This allows the flavors to meld beautifully.
Notes
Make Ahead: This salsa can be made up to 24 hours in advance. Store it in an airtight container in the refrigerator. The flavors often deepen overnight!nServing Suggestions: This versatile salsa is fantastic with grilled chicken, fish tacos, pork tenderloin, or simply scooped up with tortilla chips. It's also a surprisingly delicious topping for cottage cheese or yogurt.nRipeness is Key: Ensure your peaches and mangoes are ripe but firm enough to dice without becoming mushy. Overripe fruit will make the salsa watery and less appealing in texture. If your fruit isn't very sweet, a tiny drizzle (1-2 teaspoons) of honey or agave can balance the flavors.
