Ingredients
  

For the Carrots
  • 1.5 lbs carrots peeled and sliced into 1/2-inch thick rounds or diagonal pieces
  • 2 tbsp olive oil
  • 1/4 tsp salt
  • 1/8 tsp black pepper freshly ground
For the Maple Glaze
  • 2 tbsp unsalted butter melted
  • 1/4 cup pure maple syrup
  • 1 tbsp fresh orange juice or water
  • 1/2 tsp fresh thyme leaves chopped (optional)
  • pinch salt

Method
 

Prepare the Carrots
  1. Wash and peel the carrots. Slice them into approximately 1/2-inch thick rounds or on the diagonal for an elegant presentation.
Sauté and Glaze
  1. Heat olive oil in a large skillet or frying pan over medium-high heat. Add the sliced carrots, 1/4 tsp salt, and 1/8 tsp black pepper. Sauté for 8-10 minutes, stirring occasionally, until the carrots begin to soften and develop a slight char.
  2. While carrots are cooking, in a small bowl, whisk together the melted unsalted butter, pure maple syrup, fresh orange juice, and a pinch of salt. If using, stir in the chopped fresh thyme leaves.
  3. Reduce the heat to medium-low. Pour the maple glaze mixture over the carrots in the skillet. Toss gently to coat all the carrots evenly. Continue to cook for another 5-7 minutes, stirring frequently, until the glaze thickens and coats the carrots beautifully.
Serve
  1. Remove from heat and serve hot. Garnish with a sprinkle of fresh parsley or an extra pinch of thyme, if desired.

Notes

For a touch of heat, add a pinch of red pepper flakes to the glaze. These carrots are best served immediately. Leftovers can be stored in an airtight container in the refrigerator for up to 3 days and reheated gently on the stovetop or microwave.
